ingredients

  • 8 (6-inch) corn tortillas
  • 1/2 cup light sour cream
  • 1/4 cup chopped cilantro
  • 1 Tablespoon lime juice
  • 1 Tablespoon olive oil
  • 1 Tablespoon minced garlic
  • 1 lb. shrimp, peeled and deveined
  • 1/4 cup frozen corn kernels, unthawed
  • 2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 2 cups chopped lettuce
  • 1/2 cup diced onion

steps

  1. Preheat oven to 325°F. Wrap tortillas in foil and place in oven.
  2. In a small bowl, combine sour cream, cilantro and lime juice. Set mixture aside.
  3. Heat oil in a heavy skillet over medium-high heat. Add garlic and corn; sauté for 3 minutes until corn is warmed. Add shrimp, chili powder and cumin; sauté about 2 more minutes until shrimp is pink and curls up.
  4. Remove tortillas from oven. Divide shrimp and corn among tortillas and top each with lettuce and onions. Serve with cilantro-lime sour cream.
